You gotta' love 'em.....BEETS!










I love beets!
In France you can find beets already pre-prepared in the market. You use a giant pickle fork to neatly grab one and put it in your plastic sack, keeping your hands from being stained. You can also find them vacu-packed. These aren't your Grannies pickled beets! Sweet and earthy!
I do a beet chutney that accompanies a goat cheese stuffed chicken breast......the chutney has jalapanos & fresh cilantro & lime juice.. it is a good combo! The herbed goat cheese oozes out of the chicken breast, hmmmmmm........I might make it this coming weekend!

At the Ferme de Gally, they have some gorgeous raw beets right now. I wash the beet, wrap in foil and let the oven bake them till tender. Then comes the messy part, the peeling.
I am using a terrific recipe from Epicuious that is featured in the above photo, perfect for the upcoming holidays.
Beets are always a part of our fall table!

I throw 1/2 a beet into the juicer with a carrot and orange every morning.

Mm! I love beets! I had Italian the other night celebrating a friend's bday and I had red beet pasta! It was crazy good! YUMMMMY!

I, too, love beets. One of my favorite things is a baked beet relish with sour cream, olive oil, fresh ground pepper and lots of garlic! I make it in shoe strings and top a really messy burger. Of course, you have to put on a HAZMAT suit to eat it, but it's soooo good.

and hey--- don't forget the greens, they are very silky and delicious! And as a chef friend says, "the beet greens are free."

Mona......Mmmmmm....beet pasta, a great idea!

ZaZa...I love making my own turkey burgers and a beet relish sounds fantastic, if you'd like to share that recipe, I'd love to have it!

Shuna.....I guess those workers at the Ferme decided that 'we' didn't need the beet greens, although, I have found them packaged with baby beets on occasion!

I love beets and live in France too, but well I never thought of making a chutney. Thanks for the idea, I'm gonna try your recipe soon.

Cindy.....This recipe isn't really a chutney, lets call it a salsa. Here is the recipe:
2 beet ‘cru’/raw (in a pinch you can use the beets in vacu-packed)
1 tsp, fresh ginger, minced
1 tbls cilantro, minced
½ lime, juiced
2 tbls. Good olive oil
1-2 tsp. Jalapeno, minced
2 tsp. Cider vinegar
s&p

Take the raw beet, wash and wrap in foil-2 to a package. Cook for about 1 ½-2 hours (till knife tender) @ 200C. Cool and chop into small dice. Add remaining ingredients. Cover with saran, place in fridge. This can be done a day in advance.

Melissa, the combo sounds fab, I'll definitely try it, thank you for the recipe. I found a pasta recipe with beets the other day and look forward to trying it...
